About Us: Summer 2011- After much discussion the decision was made to move forward with constructing and operating a maple syrup business. The idea was simple, to utilize family farm land from a once thriving dairy farm in an agricultural operation. The plan, build a sugar house for making maple syrup, install 3000 taps on a tubing and vacuum system that would bring sap from the trees to the sugar house. Locate a reverse osmosis machine, to remove water from the sap thus concentrating the sugar to reduce boiling time, and a maple syrup evaporator for boiling the sap. Locate other equipment such as filtering,bottling, and storing maple syrup. This was not a small undertaking. It would require lots of help from friends and family.
February 4th 2012- Our first day of making maple syrup, it was so exciting to see all the hard work pay off.
March 2012 :Our first maple season is complete. The plan had come full circle. It was a challenging year for most in the maple industry; with wild weather fluctuations and an extreamly short spring. 2012 has gone into history as one of the most challenging seasons. The 2012 season produced high quality maple syrup just not high quantity. Our goal here at Happy Jack's Maple is to bring the customer the highest quality maple syrup from the finger lakes region of New York. Being our first season a high percentage of our business has come from word of mouth, repeat customers and referrals. We sincerly hope you try some of our delicious maple syrup.
